  • Because this loaf is made without preservatives and in small batches, enjoying fresh or freezing the same day of purchase are recommended for peak freshness and flavor.

Room temperature (1-2 days): Wrap the loaf in either a clean kitchen towel, a paper bag inside a bread box (better), or beeswax bread bag (best). Avoid airtight plastic, as it softens the crust and encourages moisture buildup. Bread stored at room temperature will be best in 48 hours and may last up to 3 days as the texture begins to firm.

Refrigeration (NOT recommended): Refrigeration exacerbates the staling process, especially in gluten-free breads. This will be evident by an extremely dry crumb and overall dense bread. If you must refrigerate, wrap the loaf very tightly in a clean kitchen towel before placing it in an airtight container. Refresh by toasting before serving.

Freezer (2-3 months): Slice the loaf and wrap it tightly in parchment paper before placing in a freezer-safe bag. Refresh by toasting from frozen or thaw at room temperature. Once thawed, you also have the option to revive the crust in a 350°F (175°C) oven and heat for 5–10 minutes.
